Story of the wine:

Le Rime is the local name for the steep slopes in the vineyards. Pinot Grigio, better known as a native of northern Italy, but here in Tuscany, where Banfi are the only growers of this variety, it is grown in the higher cooler altitudes it makes an excellent, slightly fuller wine. The freshness and acidity necessary to such a wine is achieved by early harvesting and a particular wine making technique of pre-fermentation oxidation to ensure a lively flavour. The Chardonnay, which always performs well in Tuscany, gives the wine extra weight and a complexity on the palate.

Grape(s): 70% Chardonnay, 30% Pinot Grigio
Area: The Pinot Grigio is from Banfi’s own vineyards and the Chardonnay is from hillside vineyards in southern Tuscany.
Density: 2,000 per ha
Yield: 75 hl/ha
Training: Spurs on Cordon
Harvest: End of August
Vinification: After light pressing it was vinified without sulphites at 14-160C in stainless steel vats for between 13 and 16 days. Usually there is a partial malolactic fermentation, except in certain vintages where it is necessary to maintain acidity and crispness.
Ageing: After fermentation it is kept at low temperatures in stainless steel vats and this combined with early bottling in December helps to maintain a good level of CO2 to maintain freshness.
