Story of the wine:

Fumaio is a modern style of white wine with a racy freshness and citrusy zing to the taste. The name is redolent of the slightly smoky flavour that tends to linger with the Sauvignon Blanc variety. This is an excellent vintage, after the April frosts which seriously reduced quantities the vintage was an early one and of top quality.

 

 Grape(s): 65% Chardonnay, 35% Sauvignon Blanc
Area: The grapes are from vineyards in Tuscany.
Density: 2-4,000 per ha.
Training: Spurs on Cordon
Yield: 75hl/ha.
Harvest: Mid August for both varieties.
 Vinification: After a light pressing the must is aerated with oxygen to remove potential oxidising elements. It is then fermented in stainless steel vats for 13-16 days at 14 – 160C. There is usually a partial malolactic fermentation except in certain vintages when there is no malolactic fermentation so as to maintain acidity and crispness.
Ageing: It is kept at low temperature in stainless steel vats and bottled in December for freshness.
